Ama Wonda Spices: A Guide to Nigerian Seasoning (Abuja Prices)

Nigerian cooking runs on a small number of seasonings used well. Curry and thyme are in almost everything, a pepper blend does the heavy lifting, and ginger and garlic sit underneath both. Get these right and most dishes follow.

This guide covers the Ama Wonda range we supply in Abuja, what each one is for, and how to store them so they last.

The full set costs N4,150, which stocks a kitchen for most of what it cooks in a month.

What each one actually does

Curry powder

The backbone of Nigerian rice and stew cooking. It carries colour as much as flavour. Add it early with the onions so the heat opens it up, rather than stirring it in at the end.

Thyme

Curry and thyme work as a pair. Thyme brings a savoury, slightly woody note that stops curry tasting flat. Almost every jollof, stew and pepper soup wants both.

Jollof rice spice

A ready blend that saves assembling four or five spices separately. The real benefit is consistency: your jollof tastes the same each time instead of drifting depending on how heavy your hand was.

Fried rice spice

Milder and less red than the jollof blend, built to season rice, vegetables and protein together without overpowering the vegetables.

Ginger and garlic blend

The practical one. Fresh is better, but fresh takes peeling, blending, and it spoils. A ready blend means you actually use it on a weeknight instead of skipping it.

Chicken masala

Warm and aromatic. Useful as a dry rub before grilling, a marinade base with a little oil, or stirred straight into a sauce.

Storing spices so they keep their strength

Ground spice loses aroma to heat, light and air. The shelf directly above the cooker is the worst place in the kitchen, and it is exactly where most people keep them.

Use airtight containers away from the stove and out of sunlight. Buy the size you will finish in a few months rather than the biggest pack available. If a spice no longer smells strong when you open it, it will not season your food either.
