Soft chicken or hard chicken?
This is the choice most people get wrong, and it is the single biggest cause of disappointing chicken.
Orobo soft chicken — N4,800/kg
Broiler chicken with tender meat that cooks quickly. Right for frying, grilling, and any weeknight meal where you want to be eating within the hour. It will not survive three hours in a pot; it falls apart.

Orobo hard chicken — N7,200/kg
Firmer meat with far more flavour. It needs time. Slow-cooked in stew, pepper soup or a rich sauce it becomes tender and gives the broth a depth soft chicken never will. Trying to fry it quickly is what leaves people chewing.

The rule is simple: fast cooking, soft chicken. Slow cooking, hard chicken.
Which cut for which dish
Chicken breast is lean and boneless. Best for stir-fries, sauces, sandwiches and anything where you do not want to deal with bone. It dries out if overcooked, so keep it brief.
Chicken wings have the best meat-to-flavour ratio for grilling and peppered dishes. They also stretch furthest at a party.

Gizzard holds its texture through long cooking, which is exactly why peppered gizzard works. Turkey gizzard is larger and firmer than chicken gizzard.

Turkey at N9,500/kg is the celebration option, but turkey portions in an everyday stew are excellent too, with more flavour per kilo than soft chicken.
Thawing and storing properly
Thaw in the fridge overnight, not on the counter. Counter thawing leaves the outside sitting at room temperature while the middle is still frozen, which is where bacteria multiply.
Portion before freezing so you thaw only what you need. Wrap tightly to prevent freezer burn, the dry greyish patches caused by moisture loss. Never refreeze raw poultry that has thawed; if you have cooked it, the cooked dish freezes safely.
